When you brew a cup of coffee, the leftover coffee grounds usually end up in the trash. But what if those used grounds, could be more than just waste? At Connecting Grounds, we realised the benefits of these used grounds. With our passion to maximise the full potential of the beloved daily drink, we created our first product: Coffee Base. Recent studies suggest that the used coffee grounds is packed with nutrients and other useful properties that could benefit our health and be used in food production. In this blog post, we’ll break down what makes Coffee Base special and how it can be used in everyday products.

Different Types of Fiber

Coffee Base is 64% fiber! It contains two main types of fiber: soluble and insoluble. Soluble fiber absorbs water and helps slow down digestion, which is beneficial for controlling blood sugar levels and keeping you full for longer. Insoluble fiber, on the other hand, doesn’t dissolve in water. It helps move food through your digestive system more quickly and adds bulk to your stool, making it easier to pass.

Together, these fibers make Coffee Base a powerful ingredient that supports gut health and digestion. Imagine adding a bit of this fiber to your diet—maybe in a smoothie or baked good—to help keep things running smoothly.

Protein: Not Just for Muscles

Coffee Base also contains protein, which is essential for building and repairing tissues in our bodies. Coffee Base contains a decent amount of proteins, especially considering that these used coffee grounds were once considered just waste.

Fats: Flavor and Function

You might not expect it, but Coffee Base also contains fats—about 14% of its total weight. Fats are important because they enhance flavor, help carry vitamins, and provide energy. The fats in Coffee Base include both "good" fats (unsaturated) and saturated fats. When using Coffee Base its bitter flavor comes from the coffee beans.

In conclusion, Coffee Base—those leftover grounds from your morning brew—is far from being just trash. It’s high in fiber, a source of protein, contains beneficial fats and is sugar-free. These qualities make it a game-changer in baked products and food production.

Using just 5% of Coffee Base as a substitute to 5% flour already enhances the nutritional value of baked products and flavor, without altering their texture or disrupting the recipe too much.

As more research is done, we will see Coffee Base becoming a common ingredient (or a base ingredient ;)) in products that support better nutrition and reduce food waste—a win-win for everyone!
